cold storage maturation, carbonation, packing and preservation.
Principles of wine making – Fruit selection, picking, crushing, sulphite addition, processing,
fermentation, aging and bottling.
Unit II
Fermentative production of citric acid, uses, microorganism, inoculum preparation, medium
preparation, fermentation, recovery and mechanism of citric acid production.
Fermentative production of vitamin B12 – Uses, structure of vit-B12, microorganisms, inoculum
preparation, medium preparation, fermentation and recovery.
Fermentative production of glutamic acid – Uses, microorganism, inoculum preparation,

Unit III
Antibiotics – Commercial production of benzyl penicillin, uses, microorganism, inoculum
